Cherry & Dark Chocolate Nice cream

Trying to get in extra protein, throughout the day, small doses at a time. Decided to incorporate cottage cheese, which otherwise is tasteless, but a great source of protein and chia seeds for fibre. Cherries are in season and pairing them with dark chocolate is a no brainer. So there you go, a simple and delicious nice cream.
Enjoy knowing that you are getting protein from cottage cheese, fibre from chia seeds and anti oxidants from berries & dark chocolate!
Ingredients:
Cottage cheese - 250 grams
Fresh cream - 250 ml
Sweetener of choice - as per taste (I used stevia)
Vanilla essence - 2 tsp
Strawberries - 1 cup (you can use any berries available)
Cherries - 1 cup
Chia seeds - 4 tbsp (pre-soaked and bloomed)
Honey - 2 tbsp
Lemon essence - 1 tsp (optional)
Dark chocolate - 1/2 cup (I used 70% Whittakers dark)
Fresh cherries - for garnish
Method:
Beat the cottage cheese till lumps are smooth. Whisk in cream and sweetener of choice till smooth.
Cook chopped strawberries and cherries with some honey and essence till mushy. Add in the chia seeds and mix well.
In a loaf pan layer the cheese mixture with cherry berry mix, top with chocolate and fresh cherries and keep in the freezer to set. Once set, you may need to keep it out a bit to thaw as the texture is not smooth like regular ice cream so it needs to soften a tad bit before scooping.
